Lemon Blueberry Spice Bread (lectin + gluten-free)
I cup fresh ground Flax seeds
1 cup Chestnut flour
1/2 cup chopped walnuts or pecans (optional)
1 tbsp each powdered cinnamon, ginger, nutmeg, cardamom (to taste)
2 tsp baking powder
1/4 cup shredded coconut
1/2 tsp salt
1/4 cup coconut oil, melted
1/2 cup maple syrup
1/3 cup yogurt or sour cream
3 tbsp lemon juice
1 tbsp lemon zest
1 tsp vanilla extract
1 cup blueberries (quickly fold in after combining dry and wet)
Preparation:In a large bowl, combine together the dry ingredients. Mix to combine.In another bowl, combine the wet ingredients. Whisk well to combine.Pour wet ingredients into the dry ingredients, mixing together to combine. Do not over-mix the batter. Gently fold in blueberries.Pour into greased 8 x 10" pan, smooth the top, and bake at 350F degrees for 50-70 minutes, until toothpick comes out clean. If browning quickly, after 40 minutes of baking, place a piece of baking parchment over the top.h
